Caramel Apple Cheesecake Bars


Ingredients

Crust:
  • 2 cups all­purpose flour
  • ½ cup firmly packed brown sugar
  • 1 cup (2 sticks) butter, softened
Cheesecake Filling:
  • 3 (8­ounce) packages cream cheese, softened
  • ¾ cup sugar, plus 2 tablespoons, divided
  • 3 large eggs
  • 1½ teaspoons vanilla extract
Apples:
  • 3 Granny Smith apples, peeled, cored and finely chopped
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Streusel Topping:
  • 1 cup firmly packed brown sugar
  • 1 cup all­purpose flour
  • ½ cup quick cooking oats
  • ½ cup (1 stick) butter, softened
Drizzle:
  • ½ cup caramel topping for drizzling after baked

  8. I'll try it with as little sugar as possible. Fortunately I like things much less sweet, since I'm diabetic. I'll probably use a variety of tart cooking apples.

  14. Mine is in the oven. I used 5 med sized apples. My concern was all the butter. AM taking it to church today, and I will get lots of comments. I thought the crust and stressed topping would have crumbled better with less butter.

    1. My crust and topping did not crumble and I'm thinking I should have used butter instead of margarine as margarine has vegetable oil in it and may have made it creamer.

    Ingredients

    Instructions
    1 _ Preheat oven to 350 degrees F.
    2 _ In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
    3 _ In a large bowl, beat cream cheese with ¾ cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
    4 _ In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.
    5 _ For the streusel topping: In a small bowl, combine all ingredients. I like to really combine it by using my clean hands to thoroughly combine the butter into the mixture.

    6 _ Sprinkle Streusel topping over apples. Bake 40-45 minutes, or until filling is set. Drizzle with caramel topping and let cool. Serve cold and enjoy! Make 16 servings.

    1. I just took this out of the oven! I used 2 cans of Apple pie filling and mixed in a bit of the spices. I won't know until it cools, how it tastes, but everything looks and smells amazing!! :)

    2. YES! And so easy!I added the Caramel sauce at serving time to the individual pieces. It was hard to let it cool completely, but worth it! :D lol

  22. I made these last year at Christmas time and they were delicious. I cut them and served them as squares so didn't put any caramel sauce on top thinking this would be too messy, and really they were quite rich enough. If I were to serve on a plate as a single dessert I would add the caramel sauce and probably a dollop of ice cream!

    1. Hi Mw, I didn't use the tin foil. A glass baking dish and there is enough butter in the base, that it won't stick.
