Ricotta Cheese Pound Cake

Ingredients

  • 90 g Coconut Oil (or Butter)
  • 180 g Sugar
  • 225g (8oz) Ricotta Cheese
  • 3 Eggs
  • 1 Tbsp Marsala Wine (or Vanilla Extract)
  • 1 Lemon (Lemon zest)

  • Dry Ingredients
  • 180 g Cake Flour ★
  • 2 tsp Baking Powder ★
  • 1/2 tsp Cinnamon ★

  • 100 g (1 bar) Chocolate

Instructions

1_ Heat oven to 180°C/350°F, coat the loaf pan with non-stick cooking spray.

2_ I'm using whole wheat cake flour.

3_ Combine all of ★the dry ingredients and put it aside.

4_ Place the coconut oil & sugar into a large bowl.

5_ Mix.

6_ Add ricotta cheese.

7_ Add eggs one by one and keep mixing.

8_ Add Marsala wine.

9_ Add the lemon zest.


10_ Add the ★ mixed dry ingredients and lightly mix. Don't knead.

11_ Add chopped chocolate.

12_ Pour it into the oil-sprayed loaf pan.

13_ Bake in the oven for about 1 hour until a skewer inserted into the center of the cake comes out batter free.
