2_ Add both Doritos flavors to a food processor (or even a blender) and pulse until it looks like coarse breadcrumbs. Transfer to a bowl or plate.
3_ In a separate bowl beat eggs. In a third bowl or plate, add flour.
4_ Coat each cheese triangle in order: First, flour. Then egg. Then the ground up Doritos. Be sure to dip the triangles in the beaten eggs quickly and work carefully to completely coat the triangles in the Doritos crumbs.
5_ As each triangle is done, lay onto a cookie sheet.
6_ Freeze the Doritos-coated cheese triangles for at least 3 hours before frying.
7_ When ready to fry, heat oil in a heavy pot, Dutch oven, or electric deep fryer to 350°F. Working in batches, fry the cheese-stuffed Doritos for 1 to 2 minutes, or until the outsides are golden brown.
8_ Remove the triangles from the oil with a slotted spoon, and place them on paper towels to drain. Serve immediately with Ranch dressing!

- 1 1/2 cups Doritos Nacho Cheese chips
- 1 1/2 cups Doritos Spicy Nacho Cheese chips
